Pasta Dough (1 Portion)
AP Flour – 1 1/4 cup
Eggs - 2
Salt – ½ tsp
Olive oil – 1 tsp
Tomate Sauce ( 1 Portion)
Tomatoes – 3 Roma
Onions – 2 TBSP (Chopped)
Garlic – ½ tsp (chopped)
Salt & Pepper – To taste
Olive oil – 1
Tsp Sugar – ¼ tsp
(Secret Ingredient – ¼ Anchovy Filet)
Pasta cooking Water can be used to adjust constancy, if needed.
Instructions: Wash your hands. Review recipe, convert for the number of portions needed. Start with the Tomate Sauce. Over medium heat, in a saucepan add olive oil and warm it up, Sautee your onion and garlic for 2 min. Add the Anchovy filet (if using). Add tomatoes, stir for 1 min, add sugar, stir. Leave simmering on low heat, covered, while working on Pasta. Pasta: Place flour on your table, form a well, and add the salt, the eggs lightly beaten, and oil. Start incorporating them until the dough is formed. Knead it for a couple of minutes, let it rest wrapped in plastic, while cleaning your work area.
Place the pot with salted water to heat up. Roll your pasta and cut it to desired shape. Make space in your area, while your pasta dries, because things are going to happen fast. Cook pasta in boiling water, for 1-2 min. Drain, (reserve some water if needed for Tomate Sauce). Adjust seasoning on Tomate Sauce. Serve your pasta with your sauce.
