Irish Stew

Ingredients for 1 large servings: 

1 strip of bacon 

12 oz. beef chuck, cut in 2-inch pieces (tossed with black pepper at least 1 tsp salt and flour) 

1/2 onions, chopped 

Pinch salt 

1 cloves garlic, minced 

3.5-oz Guinness beer, or other dark beer (non-Alcoholic, if you prefer) 

0.5 TBSP tomato paste 

Pinch of thyme 

1 md potato cut in md pieces

 3 baby carrots, cut in md pieces 

1/2 ribs celery, cut in 1-inch pieces 

¾ cups chicken stock, or as needed 

1/4 tsp sugar salt and freshly ground black pepper to taste 


- In a pan Render the fat off the bacon strip until crispy, keep the fat, place the bacon in a pot - In the same pan, seared the beef, place in the pot - In the same pan, sauteed the onions, garlic, add the Beer and Deglaze your pan, pour everything in the pot. - Add the rest of the ingredient to your pot. - Simmer stew on very low heat, covered, for about 45 min, or until fork tender - Uncover, raise heat to med-high, and reduce, stirring occasionally, until sauce thickens to your liking - Taste and adjust seasoning!
