Irish Chocolate Pot de Creme

For two portions

  • 2.5 ounces semi-sweet chocolate chips (good quality)
  • 0.75 Tablespoons granulated sugar
  • 2 oz Irish Cream Liqueur or Non-Alcoholic
  • 2 egg yolks
  • 1 tsp vanilla
  • 3oz heavy cream
  • 2 oz whole milk

Heat the cream and milk and pour over the chocolate. Set aside.

Mix the yolks, sugar, vanilla and Irish cream until smooth. 

Add the egg mixture to the melted chocolate and whisk to make sure it's well incorporated. 

Pass through a strainer (for a smoother product). Pour your strained mixture into two oven safe ramekins/ glass containers. 

Place in a water bath, in a 350F oven for 30 min.

Take out of the oven, let it cool off in the water bath for 10 min, place in the fridge to set.

You can serve it with whipped cream or your favorite topping.
